Description

A simple, rustic tart featuring thinly sliced Honeycrisp apples baked in a flaky crust.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 4 tablespoons ice water
  • 3 medium Honeycrisp apples, thinly sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Combine flour and salt in a bowl. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Add ice water one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
  3. In a separate bowl, toss the apple slices with granulated sugar, lemon juice, and cinnamon.
  4. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  5. On a lightly floured surface, roll the chilled dough into a rough 12-inch circle. Transfer the dough to the prepared baking sheet.
  6. Arrange the apple slices over the dough, leaving a 2-inch border around the edge.
  7. Fold the dough border up and over the edges of the apples to create a rustic crust.
  8. Brush the exposed crust with the beaten egg and sprinkle with coarse sugar.
  9. Bake for 30 to 35 minutes, or until the crust is golden brown and the apples are tender.
  10. Let cool slightly before slicing and serving.

Notes

  • For a flakier crust, keep the butter and water very cold.
  • You can substitute other firm apples if Honeycrisp apples are unavailable.
  • Serve warm with vanilla ice cream if desired.
