Ingredients

- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup unsweetened plant-based milk
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 cup chopped fresh kale
- 1 tablespoon chopped fresh herbs (e.g., parsley, chives, rosemary)
Instructions
- Preheat your oven to 375°F (190°C). Grease and flour a loaf pan.
- In a large bowl, whisk together the flour, salt, baking powder, and baking soda.
- In a separate bowl, combine the plant-based milk and olive oil.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Stir in the minced garlic, chopped kale, and fresh herbs.
- Pour the batter into the prepared loaf pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- You can add vegan cheese for extra flavor.
- Other vegetables like spinach or sun-dried tomatoes can be substituted for kale.
