- 1 cup club soda, chilled
- 1/4 cup lime juice, fresh
- 2 tablespoons mint leaves, fresh
- Ice cubes
Instructions
- Puree the watermelon in a blender until smooth.
- Strain the watermelon puree through a fine-mesh sieve to remove pulp.
- In a pitcher, combine the strained watermelon juice, lime juice, and mint leaves.
- Gently muddle the mint leaves to release their flavor.
- Fill glasses with ice cubes.
- Pour the watermelon mixture into the glasses, filling about two-thirds full.
- Top with chilled club soda.
- Stir gently and serve immediately.
Notes
- For a sweeter mocktail, add a touch of agave nectar or simple syrup.
- Garnish with extra mint sprigs or a watermelon wedge.
- You can make the watermelon puree ahead of time and store it in the refrigerator for up to 2 days.
