Description

A basic recipe for a hearty vegetable soup.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chopped potatoes
  • 1 cup chopped green beans
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Pour in vegetable broth and diced tomatoes. Add potatoes, green beans, thyme, salt, and pepper.
  5. Bring the soup to a boil. Reduce heat and simmer, covered, for 20 minutes, or until vegetables are tender.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the pot.
  • You can add other vegetables like zucchini or corn if you wish.
