  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup unsweetened plant milk
  • 1/4 cup maple syrup
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
  2. In a large bowl, mix the rolled oats, flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the plant milk, maple syrup, vegetable oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the squeezed, grated zucchini. Do not overmix.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the sticks cool in the pan for 10 minutes before cutting into small rectangular sticks.
  9. Cool completely before serving.
