Ingredients

  • 1/4 cup soy sauce or tamari
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup
  • 1 tablespoon jerk seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 12 small corn or flour tortillas
  • Toppings: Shredded cabbage, chopped cilantro, avocado slices

Instructions

  1. Place walnuts in a food processor. Pulse until the walnuts resemble coarse ground meat. Do not over-process into butter.
  2. In a bowl, whisk together soy sauce, lime juice, maple syrup, jerk seasoning, smoked paprika, allspice, and cayenne pepper if using.
  3. Add the ground walnuts to the marinade and mix well. Let it sit for 10 minutes.
  4. Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Add the marinated walnut mixture to the skillet. Cook, stirring frequently, for 5 to 7 minutes until heated through and slightly browned.
  7. Pour in the vegetable broth. Cook until the liquid evaporates and the mixture is slightly dry, about 3 minutes.
  8. Warm the tortillas according to package directions.
  9. Fill each tortilla with the jerk walnut mixture. Top with shredded cabbage, cilantro, and avocado slices. Serve immediately.
