Description

Ingredients

  • 1/2 cup coconut milk (canned or carton)
  • 1/4 cup water or juice
  • 1 tablespoon shredded unsweetened coconut
  • 1 teaspoon lime juice (optional)

Instructions

  1. Place the frozen pineapple chunks, coconut milk, water or juice, shredded coconut, and lime juice (if using) into a blender.
  2. Secure the lid on the blender.
  3. Blend on high speed until the mixture is completely smooth and creamy. Add a splash more liquid if the mixture is too thick.
  4. Pour the smoothie into a glass.
  5. Serve immediately.

Notes

  • For a colder smoothie, use frozen coconut milk cubes instead of liquid coconut milk.
