Description

Ingredients

  • 500g granulated sugar
  • 500ml hot water

Instructions

  1. Weigh your citrus peels.
  2. Place the peels in a bowl with the granulated sugar.
  3. Muddle the peels and sugar together to release the citrus oils.
  4. Let the mixture sit for 2-3 hours at room temperature.
  5. Add the hot water to the bowl and stir until the sugar dissolves.
  6. Strain the mixture through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible.
  7. Bottle the citrus stock and store in the refrigerator.
