Description
A flavorful and sustainable citrus stock mixer made from leftover citrus peels.
Ingredients

- 200g citrus peels (from lemons, limes, oranges, grapefruits)
- 500g granulated sugar
- 500ml hot water
Instructions
- Weigh your citrus peels.
- Place the peels in a bowl with the granulated sugar.
- Muddle the peels and sugar together to release the citrus oils.
- Let the mixture sit for 2-3 hours at room temperature.
- Add the hot water to the bowl and stir until the sugar dissolves.
- Strain the mixture through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible.
- Bottle the citrus stock and store in the refrigerator.
Notes
- Use a variety of citrus peels for a more complex flavor.
- Ensure the peels are clean and free of any pith.
- The stock will keep in the refrigerator for up to 2 weeks.
