Strawberry Shortcake Donuts

Description

A recipe for baked donuts topped with fresh strawberries and a simple glaze.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 12-cup donut pan.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, whisk the granulated sugar, melted butter, egg, milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Spoon or pipe the batter into the prepared donut pan, filling each mold about two-thirds full.
  6. Bake for 9 to 11 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. While the donuts cool, prepare the glaze by whisking the powdered sugar and 2 tablespoons of milk until smooth.
  9. Dip the top of each cooled donut into the glaze. Let the glaze set slightly.
  10. Top each glazed donut with a few slices of fresh strawberries before serving.

Notes

  • You can use a piping bag or a large zip-top bag with the corner snipped off to fill the donut molds easily.
  • If you prefer a thicker glaze, add less milk. For a thinner glaze, add a few more drops of milk.
