Description

Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/2 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, plus more for serving
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 24 tablespoons ice water

Instructions

  1. Combine chickpeas, tahini, lemon juice, garlic, olive oil, cumin, and salt in a food processor.
  2. Process until the mixture is smooth, scraping down the sides as needed.
  3. With the motor running, slowly add ice water, one tablespoon at a time, until the hummus reaches your desired creamy consistency.
  4. Taste and adjust salt or lemon juice if necessary.
  5. Transfer hummus to a serving bowl, drizzle with olive oil, and serve.

Notes

  • For extra smooth hummus, remove the skins from the chickpeas before processing.
  • If you do not have ice water, use cold tap water.
