Ingredients

  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons bourbon
  • 1 tablespoon milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and bourbon.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. If using, stir in the chopped pecans.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake is cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, bourbon, and milk or cream until smooth. Add more bourbon or milk if needed to reach desired consistency.
  11. Drizzle the glaze over the cooled cake.
