A simple baked casserole combining a savory meat filling with a cornbread topping.

- 1 pound ground beef
- 1 medium onion, chopped
- 1 can (15 ounces) tomato sauce
- 1 can (15 ounces) kidney beans, rinsed and drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/4 cup vegetable oil
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9-inch pie plate.
- Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
- Add the chopped onion to the skillet and cook until soft, about 5 minutes.
- Stir in the tomato sauce, kidney beans, chili powder, cumin, and salt. Simmer for 10 minutes. Pour this mixture into the prepared pie plate.
- In a separate bowl, whisk together the cornmeal, flour, baking powder, and salt.
- In another bowl, whisk together the milk, eggs, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Pour the batter evenly over the meat mixture in the pie plate.
- Bake for 30 to 35 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
- Let the pie cool for 10 minutes before slicing and serving.
Notes
- You can substitute ground turkey or shredded cooked chicken for the ground beef.
- Add 1/2 cup of shredded cheddar cheese to the batter before pouring it over the filling for extra flavor.
