Description
A recipe for cooking tender Texas style brisket using an oven.

- 1 (10-12 lb) beef brisket, whole packer cut
- 2 tablespoons coarse black pepper
- 1 tablespoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup beef broth
- 1 cup water
Instructions
- Trim excess fat from the brisket, leaving about 1/4 inch thickness on the fat cap.
- Mix the black pepper, salt, garlic powder, and onion powder to create the rub.
- Rub the spice mixture evenly over the entire surface of the brisket.
- Preheat your oven to 275 degrees Fahrenheit (135 degrees Celsius).
- Place the brisket fat-side up in a large roasting pan.
- Pour the beef broth and water into the bottom of the roasting pan.
- Cover the roasting pan tightly with aluminum foil.
- Bake for 4 to 6 hours, or until the internal temperature reaches 160 degrees Fahrenheit (71 degrees Celsius).
- Remove the foil and increase the oven temperature to 325 degrees Fahrenheit (163 degrees Celsius).
- Continue cooking, uncovered, for another 1 to 2 hours, or until the internal temperature reaches 200-205 degrees Fahrenheit (93-96 degrees Celsius) and the brisket is probe tender.
- Remove the brisket from the oven and let it rest, still loosely tented with foil, for at least 1 hour before slicing against the grain.
Notes
- For a deeper smoke flavor, you can add a small amount of liquid smoke to the liquid in the roasting pan.
- Resting the brisket is crucial for moisture retention. Do not skip this step.
