- 1/2 cup sweetened condensed milk
- 1/2 cup fresh key lime juice
- 1 teaspoon lime zest
- 1 cup crushed graham crackers
- 1/2 cup sweetened shredded coconut, toasted
- Lime slices for garnish
Instructions
- Whip the heavy cream and powdered sugar until stiff peaks form. Set aside.
- In a separate bowl, beat the softened cream cheese until smooth.
- Gradually beat in the sweetened condensed milk, key lime juice, and lime zest until fully combined and smooth.
- Gently fold the whipped cream into the lime mixture until just combined.
- In small glasses or jars, layer the ingredients: start with a layer of graham cracker crumbs, then a layer of the lime mixture, followed by a sprinkle of toasted coconut.
- Repeat the layers until the glasses are full, ending with the lime mixture.
- Chill the parfaits for at least 2 hours.
- Garnish with a lime slice before serving.
Notes
- Toast the shredded coconut in a dry skillet over medium heat until golden brown, stirring constantly.
- If fresh key limes are unavailable, use regular limes, but adjust the juice amount to taste for tartness.
- You can prepare the lime filling one day ahead of time.
