Description
A simple, one-pan meal combining ground beef, rice, and taco seasoning.
Ingredients

- 1 pound ground beef
- 1 cup uncooked white rice
- 1 packet (1 ounce) taco seasoning mix
- 2 cups water
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 cup shredded cheddar cheese
- 1 tablespoon vegetable oil
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the ground beef to the skillet and cook until browned. Drain off any excess fat.
- Stir in the taco seasoning mix.
- Add the uncooked rice, water, and the can of diced tomatoes and green chilies to the skillet. Stir well.
- Bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during simmering.
- Remove the skillet from the heat. Let it stand, covered, for 5 minutes.
- Stir in the shredded cheddar cheese until melted.
- Serve hot.
Notes
- You can substitute ground turkey for ground beef.
- Add a can of drained black beans with the tomatoes for extra fiber.
