Description

A simple, layered casserole featuring ground meat, beans, cheese, and taco seasoning, baked until hot and bubbly.


Ingredients

  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (10 ounces) red enchilada sauce
  • 8 corn tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
  3. Stir the taco seasoning mix and water into the browned beef. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Remove the skillet from the heat. Stir in the black beans and enchilada sauce.
  5. Spread half of the meat mixture evenly in the bottom of the prepared baking dish.
  6. Arrange half of the cut tortillas over the meat mixture.
  7. Sprinkle half of the cheddar cheese and half of the Monterey Jack cheese over the tortillas.
  8. Spoon the remaining meat mixture over the cheese layer.
  9. Top with the remaining tortillas.
  10. Sprinkle the remaining cheddar and Monterey Jack cheese over the top layer of tortillas.
  11. Bake for 20 to 25 minutes, or until the cheese is melted and the casserole is heated through.

Notes

  • You can substitute ground turkey or chicken for the ground beef.
  • For extra flavor, add 1/2 cup of chopped onion when browning the meat.
