A refreshing and healthy coconut chia cooler perfect for summer parties.
Ingredients

- 1 can (13.5 oz) full-fat coconut milk
- 1/4 cup chia seeds
- 2 tablespoons maple syrup or agave nectar (adjust to taste)
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 cups cold water
- Ice cubes
- Fresh mint leaves for garnish
- Lime wedges for garnish
Instructions
- In a pitcher, whisk together the coconut milk, chia seeds, maple syrup (or agave nectar), vanilla extract, and salt until well combined.
- Stir in the cold water.
- Refrigerate for at least 2 hours, or preferably overnight, to allow the chia seeds to swell and the cooler to chill thoroughly.
- Before serving, stir the mixture again as the chia seeds may settle.
- Pour over ice cubes in glasses.
- Garnish with fresh mint leaves and lime wedges.
