Ingredients

Instructions

  1. Combine cherries, water, and sugar in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Cook for 5-7 minutes, until cherries soften.
  2. Remove from heat and stir in vanilla extract. Let cool completely.
  3. Strain the cherry mixture through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard the solids.
  4. In a large pitcher, combine the cherry syrup with chilled club soda or sparkling water.
  5. Fill glasses with ice cubes. Pour the cherry vanilla cooler over the ice.
  6. Garnish with fresh mint sprigs. Serve immediately.
