A refreshing and vibrant cherry vanilla cooler, perfect for summer parties.
Ingredients

- 1 cup pitted cherries
- 1/2 cup water
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups chilled club soda or sparkling water
- Fresh mint sprigs for garnish
- Ice cubes
Instructions
- Combine cherries, water, and sugar in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves. Cook for 5-7 minutes, until cherries soften.
- Remove from heat and stir in vanilla extract. Let cool completely.
- Strain the cherry mixture through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard the solids.
- In a large pitcher, combine the cherry syrup with chilled club soda or sparkling water.
- Fill glasses with ice cubes. Pour the cherry vanilla cooler over the ice.
- Garnish with fresh mint sprigs. Serve immediately.
Notes
- For a stronger cherry flavor, use dark sweet cherries.
- Adjust sugar to your taste.
- This syrup can be made ahead and stored in the refrigerator for up to 3 days.
