Ingredients

  • 1 cup fresh raspberries
  • 1/2 cup dried hibiscus flowers
  • 4 cups water
  • 1/4 cup sugar (or to taste)
  • 2 cups sparkling water or club soda
  • Fresh mint springs, for garnish
  • Lemon slices, for garnish

Instructions

  1. Combine raspberries, hibiscus flowers, and water in a saucepan.
  2. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Strain the mixture through a fine-mesh sieve, pressing on the solids to extract all the liquid.
  4. Discard the solids.
  5. Stir in sugar until dissolved.
  6. Let the hibiscus raspberry syrup cool completely.
  7. Fill glasses with ice.
  8. Add about 1/4 cup of the hibiscus raspberry syrup to each glass.
  9. Top with sparkling water or club soda.
  10. Garnish with fresh mint springs and lemon slices.
  11. Stir gently and serve immediately.
