A simple recipe for blanched spinach served with a tangy ponzu dressing.
Ingredients

- 1 lb fresh spinach
- 3 tablespoons ponzu sauce
- 1 teaspoon sesame oil
- 1 teaspoon soy sauce
- 1/2 teaspoon toasted sesame seeds
Instructions
- Bring a large pot of water to a boil.
- Blanch the spinach in boiling water for 30 to 60 seconds until wilted.
- Immediately transfer the spinach to an ice bath to stop the cooking process.
- Drain the spinach well and squeeze out excess water. Chop roughly if desired.
- In a small bowl, whisk together the ponzu sauce, sesame oil, and soy sauce.
- Place the spinach in a serving dish. Pour the dressing over the spinach.
- Sprinkle with toasted sesame seeds before serving.
Notes
- You can adjust the amount of ponzu sauce to your taste preference.
- For a richer flavor, add a small amount of grated fresh ginger to the dressing.
