Spinach and Feta Quesadillas

Description

A quick recipe for savory quesadillas filled with spinach and feta cheese.


Ingredients

  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and set aside.
  3. Place one tortilla in the skillet. Sprinkle half of the feta cheese over one half of the tortilla.
  4. Spoon half of the cooked spinach over the feta cheese.
  5. Fold the empty half of the tortilla over the filling.
  6. Cook for 2-3 minutes per side, until golden brown and the cheese is melted.
  7. Remove from skillet, slice in half, and repeat with remaining ingredients.

Notes

  • You can add a pinch of garlic powder with the spinach for extra flavor.
  • Serve immediately with salsa or sour cream if desired.
