Description
A refreshing, non-alcoholic drink combining sweet watermelon with a hint of spice.
Ingredients

- 4 cups cubed seedless watermelon
- 1/2 cup fresh lime juice
- 1/4 cup fresh mint leaves
- 2 tablespoons simple syrup (adjust to taste)
- 1 small jalapeño, thinly sliced (remove seeds for less heat)
- 1 cup sparkling water or club soda, chilled
- Ice cubes
Instructions
- Place the watermelon cubes, lime juice, mint leaves, simple syrup, and jalapeño slices into a blender.
- Blend until completely smooth.
- Strain the mixture through a fine-mesh sieve into a pitcher to remove pulp and mint pieces. Discard solids.
- Taste the mixture and add more simple syrup if you prefer more sweetness.
- Fill glasses with ice.
- Pour the watermelon mixture into the glasses, filling them about two-thirds full.
- Top each glass with chilled sparkling water or club soda.
- Garnish with a small mint sprig or a thin slice of jalapeño, if desired.
Notes
- For a less spicy drink, use only half of the jalapeño or skip it entirely.
- If you do not have simple syrup, mix equal parts sugar and hot water until the sugar dissolves, then cool completely.
- You can muddle the mint and jalapeño in the bottom of the pitcher before adding the liquid for a stronger flavor infusion.
