  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (or more for extra heat)
  • 28 ounces crushed tomatoes
  • 1/2 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Pour in the crushed tomatoes and add the dried oregano. Season with salt and pepper.
  5. Bring the sauce to a simmer and cook for 10 minutes, stirring occasionally.
  6. Add the drained pasta directly to the skillet with the sauce. Toss to coat.
  7. If the sauce seems too thick, add reserved pasta water, a few tablespoons at a time, until the sauce reaches your desired consistency.
  8. Serve immediately, garnished with fresh parsley.
