A simple cake recipe featuring caramelized spiced pears baked on top.

- 1/2 cup unsalted butter
- 1/2 cup packed light brown sugar
- 4 firm ripe pears, peeled, cored, and halved
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Melt 1/2 cup butter in a 9-inch round cake pan. Sprinkle the brown sugar evenly over the melted butter.
- Arrange the pear halves, cut side down, in a decorative pattern over the sugar mixture in the pan.
- Mix the cinnamon, nutmeg, and cloves together. Sprinkle this spice mixture over the pears.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a separate large bowl, cream together the 1/2 cup granulated sugar and 1/4 cup softened butter until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
- Carefully spoon the batter over the pears in the pan, spreading it evenly.
- Bake for 45 to 55 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the cake cool in the pan on a wire rack for 10 minutes.
- Place a serving plate upside down over the cake pan. Carefully invert the cake onto the plate. Lift the pan off. Serve warm or at room temperature.
Notes
- Use firm pears so they hold their shape during baking.
- You can substitute other warm spices like allspice if you prefer.
