  • 1/2 cup packed light brown sugar
  • 4 firm ripe pears, peeled, cored, and halved
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Melt 1/2 cup butter in a 9-inch round cake pan. Sprinkle the brown sugar evenly over the melted butter.
  3. Arrange the pear halves, cut side down, in a decorative pattern over the sugar mixture in the pan.
  4. Mix the cinnamon, nutmeg, and cloves together. Sprinkle this spice mixture over the pears.
  5. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  6. In a separate large bowl, cream together the 1/2 cup granulated sugar and 1/4 cup softened butter until light and fluffy.
  7. Beat in the eggs one at a time, then stir in the vanilla extract.
  8. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
  9. Carefully spoon the batter over the pears in the pan, spreading it evenly.
  10. Bake for 45 to 55 minutes, or until a wooden pick inserted into the center comes out clean.
  11. Let the cake cool in the pan on a wire rack for 10 minutes.
  12. Place a serving plate upside down over the cake pan. Carefully invert the cake onto the plate. Lift the pan off. Serve warm or at room temperature.
