Description
A rustic, free-form pastry filled with spiced pears and tart cranberries.

- 1 recipe pie crust dough (for a 9-inch galette)
- 2 ripe pears, peeled, cored, and thinly sliced
- 1/2 cup fresh or frozen cranberries
- 1/4 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 large egg, beaten (for egg wash)
- 1 tablespoon coarse sugar (for sprinkling)
Instructions
- Prepare the pie crust dough and chill it according to your recipe instructions.
- In a medium bowl, gently toss the sliced pears, cranberries, granulated sugar, flour, cinnamon, nutmeg, and lemon juice until the fruit is evenly coated.
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll the dough into a rough 12-inch circle. Transfer the dough to the prepared baking sheet.
- Arrange the spiced fruit mixture in the center of the dough, leaving a 2-inch border around the edge.
- Fold the dough border up and over the edges of the filling, pleating it as you go to form a rustic crust.
- Brush the folded crust edges with the beaten egg wash and sprinkle with coarse sugar.
- Bake for 35 to 45 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the galette cool on the baking sheet for at least 15 minutes before slicing and serving.
Notes
- You can substitute apples for pears if desired.
- For extra flavor, add 1/4 teaspoon of ground ginger to the fruit mixture.
- Serve warm with a scoop of vanilla ice cream.
