- 2 cups mashed sweet potatoes
- 1/2 cup granulated sugar
- 1/4 cup butter, melted
- 2 large eggs, beaten
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup pure maple syrup
- 1/2 cup chopped pecans (for topping)
- 1/2 cup brown sugar (for topping)
- 2 tablespoons butter, softened (for topping)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease a medium baking dish.
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, melted butter, beaten eggs, milk, vanilla extract, and salt. Mix until smooth.
- Stir in the maple syrup. Pour the mixture into the prepared baking dish.
- In a separate small bowl, combine the chopped pecans, brown sugar, and softened butter for the topping. Mix with a fork until crumbly.
- Sprinkle the topping evenly over the sweet potato mixture.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the casserole is set.
Notes
- You can use canned sweet potatoes, drained well, if you prefer not to boil and mash fresh ones.
- For a smoother texture, press the sweet potato mixture through a ricer before mixing.
