  • 2 large eggs
  • 1 cup buttermilk
  • Vegetable oil, for frying
  • 1/2 cup honey
  • 2 tablespoons hot sauce (or more, to taste)
  • 1 tablespoon apple cider vinegar

Instructions

  1. In a large bowl, whisk together flour, cornstarch, salt, pepper, paprika, cayenne pepper, garlic powder, and onion powder.
  2. In a separate bowl, whisk the eggs and buttermilk together.
  3. Dip each piece of chicken first into the buttermilk mixture, letting excess drip off, then dredge thoroughly in the flour mixture, pressing the coating onto the chicken. Place coated chicken on a wire rack.
  4. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 325 degrees Fahrenheit.
  5. Carefully place chicken pieces into the hot oil, ensuring not to overcrowd the pot. Fry in batches.
  6. Fry chicken for about 6-8 minutes per side, until golden brown and the internal temperature reaches 165 degrees Fahrenheit.
  7. Remove chicken from oil and place back on the wire rack to drain excess oil.
  8. While the chicken drains, prepare the glaze: In a small saucepan, combine honey, hot sauce, and apple cider vinegar. Heat over low heat until smooth and slightly runny. Do not boil.
  9. Brush or drizzle the hot honey glaze generously over the warm fried chicken pieces.
  10. Serve immediately.
