Description

Simple recipe for tender chicken cooked in a sweet and savory teriyaki sauce using a slow cooker.


Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 cup teriyaki sauce (store-bought or homemade)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

Instructions

  1. Place the chicken in the slow cooker.
  2. In a separate bowl, whisk together the teriyaki sauce, soy sauce, brown sugar, rice vinegar, ginger, garlic, and sesame oil. Pour this mixture over the chicken.
  3. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and easily shreds.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce.
  5. In a small bowl, mix the cornstarch and cold water to create a slurry. Stir the slurry into the sauce in the slow cooker.
  6. Cook on high for 10 to 15 minutes, stirring occasionally, until the sauce thickens.
  7. Serve the chicken over rice, garnished with sesame seeds and green onions.

Notes

  • For thicker sauce, increase the cornstarch slurry amount slightly.
  • You can use chicken breasts, but thighs stay more moist during slow cooking.
  • Serve with steamed broccoli or rice for a complete meal.
