Description
A quick and simple vegetable side dish made in one skillet.
Ingredients

- 2 medium zucchini, sliced
- 8 ounces cremini mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced zucchini and mushrooms to the skillet.
- Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are tender-crisp and browned.
- Add the minced garlic, salt, and pepper. Cook for 1 minute more until the garlic is fragrant.
- Remove from heat and stir in the fresh parsley.
- Serve immediately.
Notes
- You can add a squeeze of fresh lemon juice before serving for brightness.
- For extra flavor, add a pinch of dried Italian seasoning with the garlic.
