- 4 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder

- 1/4 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 6 tablespoons cold unsalted butter, cut into pieces
- 1/2 cup milk
- 1 large egg, lightly beaten
- 1 tablespoon coarse sugar for topping
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- In a medium bowl, mix the blueberries, granulated sugar, cornstarch, and lemon juice. Pour this mixture into a 10-inch oven-safe skillet.
- In a separate bowl, whisk together the flour, baking powder, salt, brown sugar, and cinnamon.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk until just combined to form a soft dough. Do not overmix.
- Drop spoonfuls of the biscuit dough over the blueberry mixture in the skillet, leaving small spaces between them.
- Brush the tops of the biscuits lightly with the beaten egg and sprinkle with coarse sugar.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the cobbler cool in the skillet for at least 15 minutes before serving.
Notes
- If using frozen blueberries, do not thaw them before mixing.
- You can substitute half of the all-purpose flour with whole wheat flour for a slightly different texture.
- Serve warm with vanilla ice cream or whipped cream.
