Description
A refreshing and versatile shrub drink, perfect for mixing with spirits or sparkling water.
Ingredients
Scale
- 1 cup fruit (berries, peaches, etc.)
- 1 cup sugar
- 1 cup apple cider vinegar
Instructions
- Combine fruit and sugar in a non-reactive bowl. Muddle gently to release juices.
- Cover the bowl and refrigerate for 24-48 hours, stirring occasionally, until the sugar is dissolved and a syrup forms.
- Strain the fruit mixture through a fine-mesh sieve, pressing on the solids to extract all liquid. Discard the fruit solids.
- Whisk in the apple cider vinegar into the fruit syrup.
- Pour the shrub into a clean, airtight bottle. Store in the refrigerator for up to 2-3 weeks.
Notes
- Use ripe, flavorful fruit for the best results.
- Adjust the sugar to your preference; less sugar will result in a more tart shrub.
- Experiment with different vinegars like white wine vinegar or balsamic vinegar for unique flavors.
- Shrubs can be used as a base for cocktails, mocktails, or diluted with sparkling water for a refreshing drink.
