- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup cooked, crumbled breakfast sausage
Instructions
- Combine flour, sugar, baking powder, and salt in a large bowl.
- Whisk milk, egg, and melted butter in a separate bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
- Gently fold in the cooked sausage.
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Drop batter by rounded teaspoons onto the hot griddle.
- Cook for 2-3 minutes per side, until golden brown and cooked through.
- Serve warm.
Notes
- You can use pre-cooked sausage links or patties, crumbled.
- For easier cleanup, use a mini muffin tin and bake at 375°F for 15-20 minutes instead of griddling.
