Description
A simple pasta dish featuring Italian sausage, bell peppers, and onions in a light sauce.

- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 3 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- 12 ounces pasta (penne or rotini recommended)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, cook the sausage over medium heat, breaking it up with a spoon, until browned. Drain off excess grease.
- Add olive oil to the skillet. Add the sliced onion and bell peppers. Cook until softened, about 5 to 7 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the diced tomatoes, chicken broth, oregano, and basil to the skillet. Bring to a simmer.
- Reduce heat to low, cover, and cook for 10 minutes, allowing flavors to combine. Season with salt and pepper.
- Add the cooked pasta to the skillet with the sausage and pepper mixture. Toss to coat evenly.
- Serve immediately, topped with Parmesan cheese if desired.
Notes
- Use sweet or hot Italian sausage based on your preference.
- For a richer sauce, substitute heavy cream for half of the chicken broth.
- You can add a pinch of red pepper flakes for extra heat.
