Description
Prepare tender round steaks served with a rich, creamy sauce flavored with cognac.

- 4 (6 ounce) round steaks, about 1/2 inch thick
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, finely chopped
- 8 ounces mushrooms, sliced
- 1/2 cup beef broth
- 1/4 cup cognac
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Season the round steaks lightly with salt and pepper on both sides.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Sear the steaks for 3 to 4 minutes per side for medium-rare, adjusting time for desired doneness. Remove steaks from the skillet and set aside, keeping them warm.
- Add the chopped onion to the same skillet and cook until softened, about 3 minutes.
- Add the sliced mushrooms to the skillet and cook until they release their moisture and brown, about 5 to 7 minutes.
- Pour in the beef broth and scrape up any browned bits from the bottom of the pan. Let the broth reduce slightly, about 2 minutes.
- Carefully add the cognac to the skillet. Let it cook for 1 minute, allowing some of the alcohol to evaporate.
- Reduce the heat to low. Stir in the heavy cream and Dijon mustard. Simmer gently until the sauce thickens slightly, about 3 minutes. Do not boil.
- Taste the sauce and adjust seasoning with salt and pepper if needed.
- Return the steaks to the skillet and spoon the sauce over them. Heat through for 1 minute.
- Serve the steaks immediately, drizzled with the sauce and garnished with fresh parsley.
Notes
- If you prefer not to use cognac, you can substitute it with dry sherry or an equal amount of beef broth mixed with 1 teaspoon of brandy extract.
- For a smoother sauce, strain the sauce after adding the cream, before returning the steaks.
