Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash the delicata squash. Do not peel; the skin is edible.
  3. Cut the squash in half lengthwise.
  4. Use a spoon to scoop out the seeds and stringy pulp.
  5. Slice each half crosswise into 1/2-inch thick rings or half-moons.
  6. Toss the squash pieces with olive oil, salt, and pepper on a baking sheet.
  7. Arrange the squash in a single layer on the baking sheet.
  8. Roast for 20 to 25 minutes, flipping halfway through, until the squash is tender and lightly browned.
