Description

A straightforward recipe for making sweet and slightly tart rhubarb fritters.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1 cup chopped fresh rhubarb
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate small bowl, whisk the egg and milk.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
  4. Gently fold in the chopped rhubarb.
  5. Heat about 1 inch of vegetable oil in a deep skillet to 350 degrees Fahrenheit (175 degrees Celsius).
  6. Carefully drop spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the pan.
  7. Fry for 2 to 3 minutes per side, until golden brown and cooked through.
  8. Remove fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  9. Dust generously with powdered sugar before serving warm.

Notes

  • If you do not have a deep fryer, use a heavy-bottomed skillet for frying.
  • Ensure the oil temperature remains consistent for even cooking.
  • Rhubarb pieces should be small so they cook fully inside the batter.
