- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup milk
- 1 cup chopped fresh rhubarb
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate small bowl, whisk the egg and milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
- Gently fold in the chopped rhubarb.
- Heat about 1 inch of vegetable oil in a deep skillet to 350 degrees Fahrenheit (175 degrees Celsius).
- Carefully drop spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the pan.
- Fry for 2 to 3 minutes per side, until golden brown and cooked through.
- Remove fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Dust generously with powdered sugar before serving warm.
Notes
- If you do not have a deep fryer, use a heavy-bottomed skillet for frying.
- Ensure the oil temperature remains consistent for even cooking.
- Rhubarb pieces should be small so they cook fully inside the batter.
