- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 tablespoon olive oil
- 1 packet (1 ounce) ranch seasoning mix
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 cup cooked rice
- 1/2 cup shredded cheddar cheese
- 1/4 cup salsa
- 2 tablespoons sour cream
Instructions
- In a bowl, toss chicken strips with olive oil and ranch seasoning mix.
- Heat a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add bell peppers and onion to the same skillet. Cook until tender-crisp, about 5-7 minutes.
- Return chicken to the skillet and stir to combine with vegetables.
- To assemble bowls, divide cooked rice among serving bowls. Top with chicken and vegetable mixture.
- Garnish with shredded cheese, salsa, and sour cream.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the vegetable mixture.
- You can substitute other vegetables like zucchini or mushrooms.
- Serve with your favorite tortilla chips for added crunch.
