Description

Simple recipe for layered pumpkin and cream cheese bars with a graham cracker crust.

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 (15 ounce) can pumpkin puree
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
  3. While the crust bakes, prepare the cream cheese layer. Beat the softened cream cheese and 1/2 cup sugar in a medium bowl until smooth. Beat in 1 egg, vanilla extract, 1/2 teaspoon cinnamon, and nutmeg until just combined.
  4. Spread the cream cheese mixture evenly over the warm crust.
  5. In a separate bowl, whisk together the pumpkin puree, brown sugar, 1 egg, 1/2 teaspoon cinnamon, and ginger.
  6. Gently spoon the pumpkin mixture over the cream cheese layer. Use a knife or skewer to gently swirl the layers together if desired.
  7. Bake for 30 to 35 minutes, or until the edges are set and the center is mostly firm.
  8. Let the bars cool completely on a wire rack before chilling them in the refrigerator for at least 2 hours before cutting.

Notes

  • For cleaner cuts, chill the bars for 4 hours or overnight.
  • You can substitute vanilla wafers for graham crackers in the crust.
