Simple recipe for making crispy chicken quesadillas using an air fryer.
Ingredients

- 2 cups cooked, shredded chicken
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/4 cup water (for brushing)
Instructions
- Mix the shredded chicken and both cheeses together in a bowl.
- Lightly brush one side of each tortilla with olive oil.
- Place half of the cheese and chicken mixture onto the un-oiled side of two tortillas, leaving a small border.
- Fold the tortillas in half to form a half-moon shape.
- Lightly brush the outside of the folded quesadillas with water.
- Place the quesadillas in the air fryer basket in a single layer, avoiding overlap.
- Air fry at 375F (190C) for 6 to 8 minutes, flipping halfway through, until golden brown and the cheese is melted.
- Remove from the air fryer, let cool for one minute, then slice into wedges.
- Repeat with the remaining filling and tortillas.
Notes
- You can use pre-cooked rotisserie chicken to save time.
- Serve with salsa, sour cream, or guacamole.
- If your air fryer basket is small, cook the quesadillas in batches.
