Ingredients

  • 1 cup sugar
  • 1 cup fresh pineapple sage leaves
  • 1/4 cup lime juice
  • 1 bottle chilled champagne or sparkling wine

Instructions

  1. Combine water and sugar in a saucepan. Heat over medium heat, stirring until sugar dissolves.
  2. Add pineapple sage leaves to the saucepan. Remove from heat and let steep for 30 minutes.
  3. Strain the syrup and discard the leaves. Let the syrup cool completely.
  4. Fill champagne flutes halfway with the cooled pineapple sage syrup.
  5. Top with chilled champagne or sparkling wine.
  6. Serve immediately.
