A refreshing and aromatic champagne cocktail featuring the unique flavor of pineapple sage.
Ingredients

- 1/2 cup fresh pineapple sage leaves, plus more for garnish
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 bottle chilled champagne or sparkling wine
Instructions
- Make the pineapple sage simple syrup. Combine the pineapple sage leaves, water, and sugar in a small saucepan.
- Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Remove from heat and let steep for 30 minutes.
- Strain the syrup through a fine-mesh sieve, discarding the leaves. Let cool completely.
- In a champagne flute, add 1-2 tablespoons of the pineapple sage simple syrup and 1 tablespoon of lime juice.
- Top with chilled champagne or sparkling wine.
- Garnish with a fresh pineapple sage leaf.
Notes
- The simple syrup can be made ahead of time and stored in an airtight container in the refrigerator for up to 1 week.
- Adjust the amount of simple syrup to your taste preference.
- For a non-alcoholic version, substitute the champagne with sparkling water or ginger ale.
