Ingredients

  • 1/2 cup fresh pineapple sage leaves, plus more for garnish
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1 bottle chilled champagne or sparkling wine

Instructions

  1. Make the pineapple sage simple syrup. Combine the pineapple sage leaves, water, and sugar in a small saucepan.
  2. Bring to a simmer over medium heat, stirring until the sugar dissolves.
  3. Remove from heat and let steep for 30 minutes.
  4. Strain the syrup through a fine-mesh sieve, discarding the leaves. Let cool completely.
  5. In a champagne flute, add 1-2 tablespoons of the pineapple sage simple syrup and 1 tablespoon of lime juice.
  6. Top with chilled champagne or sparkling wine.
  7. Garnish with a fresh pineapple sage leaf.

Notes
