Description
A refreshing, spicy, and tart non-alcoholic drink featuring pineapple, jalapeno, and lime.
Ingredients

- 1 cup pineapple chunks, fresh or frozen
- 1/2 small jalapeno, seeds removed for less heat
- 1/2 cup cold water
- 1/4 cup fresh lime juice
- 2 tablespoons simple syrup (adjust to taste)
- Ice cubes
- Soda water or sparkling water, to top
- Lime wheel, for garnish
Instructions
- Place the pineapple chunks and jalapeno piece into a blender.
- Add the cold water, lime juice, and simple syrup.
- Blend until completely smooth.
- Taste the mixture and add more simple syrup if you prefer it sweeter.
- Strain the mixture through a fine-mesh sieve into a glass to remove pulp and seeds. Press down on the solids to extract all liquid.
- Fill a serving glass with ice cubes.
- Pour the strained mocktail base over the ice, filling the glass about two-thirds full.
- Top the drink with soda water or sparkling water.
- Gently stir once.
- Garnish with a lime wheel.
Notes
- For a milder drink, use only a small slice of jalapeno or leave the seeds in for more heat.
- To make simple syrup, combine equal parts sugar and hot water and stir until dissolved; let it cool before using.
- You can prepare the base mixture ahead of time and store it in the refrigerator for up to 24 hours.
