A refreshing and vibrant mocktail made with pineapple and ginger.
Ingredients

- 1 cup fresh pineapple chunks
- 1 inch piece fresh ginger, peeled and sliced
- 1 tablespoon lime juice
- 1 tablespoon honey or agave nectar (optional)
- 1 cup sparkling water or club soda
- Ice cubes
- Fresh mint sprigs, for garnish
Instructions
- Combine pineapple chunks and ginger slices in a blender.
- Blend until smooth.
- Strain the mixture through a fine-mesh sieve into a glass.
- Add lime juice and sweetener (if using). Stir to combine.
- Fill the glass with ice cubes.
- Top with sparkling water or club soda.
- Garnish with fresh mint sprigs.
- Serve immediately.
Notes
- Adjust the amount of ginger to your preference.
- For a spicier kick, leave some of the ginger fibers in the strained mixture.
- You can substitute other fruits like mango or passion fruit for pineapple.
