Description
A simple recipe for cooking chicken breast with peeled Brussels sprouts.
Ingredients
Scale
- 1 lb chicken breast, cut into bite-sized pieces
- 1 lb Brussels sprouts, outer leaves removed and halved
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
Instructions
- Toss the chicken pieces with 1 tablespoon of olive oil, salt, pepper, and garlic powder in a bowl.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add the halved Brussels sprouts to the same skillet. Cook, stirring occasionally, until tender and slightly caramelized, about 8-10 minutes.
- Return the cooked chicken to the skillet with the Brussels sprouts. Toss to combine and heat through for 1 minute.
- Serve immediately.
Notes
- You can add a squeeze of lemon juice at the end for brightness.
- For extra flavor, add 1/4 cup of chicken broth during the last few minutes of cooking the sprouts.
