Description

A simple recipe for cooking chicken breast with peeled Brussels sprouts.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 lb Brussels sprouts, outer leaves removed and halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

  1. Toss the chicken pieces with 1 tablespoon of olive oil, salt, pepper, and garlic powder in a bowl.
  2. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. Add the halved Brussels sprouts to the same skillet. Cook, stirring occasionally, until tender and slightly caramelized, about 8-10 minutes.
  5. Return the cooked chicken to the skillet with the Brussels sprouts. Toss to combine and heat through for 1 minute.
  6. Serve immediately.

Notes

  • You can add a squeeze of lemon juice at the end for brightness.
  • For extra flavor, add 1/4 cup of chicken broth during the last few minutes of cooking the sprouts.
