A simple recipe for a salmon bowl featuring an orange glaze served over cooked farro.

- 2 salmon fillets (about 6 oz each)
- 1 cup farro
- 2 cups water or broth
- 1/4 cup orange juice
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Sliced green onions for garnish
Instructions
- Cook the farro: Combine farro and water or broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until tender. Drain any excess liquid.
- Prepare the glaze: In a small bowl, whisk together orange juice, soy sauce, honey, ginger, and garlic.
- Cook the salmon: Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper. Place salmon skin-side down (if applicable) in the skillet. Cook for 4-5 minutes.
- Glaze the salmon: Flip the salmon. Pour half of the orange glaze over the fillets. Cook for another 3-5 minutes, basting occasionally, until the salmon is cooked through and the glaze has thickened slightly.
- Assemble the bowls: Divide the cooked farro between two bowls. Place one salmon fillet on top of the farro in each bowl. Drizzle the remaining glaze over the salmon and farro. Garnish with green onions if desired.
Notes
- You can substitute quinoa or brown rice for farro.
- Bake the salmon at 400°F (200°C) for 12-15 minutes if you prefer not to pan-fry.
