One Pot Shrimp Orzo

Description

A simple, quick meal where shrimp and orzo pasta cook together in one pot.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound raw shrimp, peeled and deveined
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in the orzo pasta and toast for 1 minute.
  6. Pour in the chicken broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  7. Stir in the heavy cream and Parmesan cheese. Cook until the sauce thickens slightly.
  8. Return the cooked shrimp to the pot. Heat through for 1-2 minutes.
  9. Season with salt and pepper.
  10. Stir in fresh parsley before serving.

Notes

  • For extra flavor, use seafood broth instead of chicken broth.
  • You can substitute half and half for heavy cream if you prefer a lighter sauce.
