Description
A simple, quick meal where shrimp and orzo pasta cook together in one pot.
Ingredients

- 1 tablespoon olive oil
- 1 pound raw shrimp, peeled and deveined
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp and set aside.
- Add onion to the pot and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in the orzo pasta and toast for 1 minute.
- Pour in the chicken broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
- Stir in the heavy cream and Parmesan cheese. Cook until the sauce thickens slightly.
- Return the cooked shrimp to the pot. Heat through for 1-2 minutes.
- Season with salt and pepper.
- Stir in fresh parsley before serving.
Notes
- For extra flavor, use seafood broth instead of chicken broth.
- You can substitute half and half for heavy cream if you prefer a lighter sauce.
