Description
A simple recipe for cooking chicken, rice, and queso sauce together in one pot.

- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup chicken broth
- 1 cup uncooked long-grain white rice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces processed cheese spread (like Velveeta), cubed
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro, for garnish (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken pieces and cook until browned on all sides, about 5 minutes. Remove chicken and set aside.
- Add onion to the pot and cook until softened, about 3 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes and green chilies, cream of chicken soup, chicken broth, rice, chili powder, cumin, salt, and pepper. Bring the mixture to a boil.
- Return the browned chicken to the pot. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and liquid is absorbed.
- Remove the pot from the heat. Stir in the cubed processed cheese spread until melted and smooth.
- Stir in the shredded Monterey Jack cheese until melted.
- Let the dish rest, covered, for 5 minutes before serving. Garnish with cilantro if desired.
Notes
- You can substitute boneless, skinless chicken thighs for breasts.
- Rinsing the rice before cooking is not necessary for this recipe.
- Use your favorite brand of processed cheese spread.
