A simple recipe for lemon garlic parmesan pasta cooked in a single pot.
Ingredients

- 1 pound pasta (linguine or spaghetti)
- 4 cups vegetable broth
- 1 cup water
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Place the pasta, vegetable broth, and water in a large pot or Dutch oven.
- Bring the mixture to a boil over medium-high heat.
- Reduce heat to medium and cook, stirring frequently to prevent sticking, until the liquid is mostly absorbed and the pasta is tender, about 10-12 minutes.
- Stir in the minced garlic and olive oil. Cook for 1 minute until the garlic is fragrant.
- Remove the pot from the heat. Stir in the heavy cream, Parmesan cheese, lemon juice, and lemon zest.
- Mix well until the cheese is melted and the sauce is creamy.
- Season with salt and pepper to your preference.
- Serve immediately, garnished with fresh parsley.
Notes
- Use a sturdy wooden spoon to stir the pasta while it cooks to prevent it from breaking.
- Adjust the amount of lemon juice for your preferred tartness.
