One Pot Creamy Lobster Orzo

Description

A simple recipe for creamy lobster orzo cooked in a single pot.


Ingredients

  • 1 tablespoon olive oil
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 1/2 cup dry white wine
  • 3 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 4 ounces cooked lobster meat, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add shallot and cook until soft, about 3 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in the orzo pasta and toast for 2 minutes.
  5. Pour in the white wine and cook, stirring, until it is absorbed.
  6. Add the broth, one cup at a time, stirring frequently and allowing the liquid to be mostly absorbed before adding the next cup. This should take about 15-20 minutes until the orzo is tender.
  7. Reduce heat to low. Stir in the heavy cream, lobster meat, and Parmesan cheese.
  8. Cook until heated through, about 2 minutes. Do not boil.
  9. Season with salt and pepper.
  10. Stir in fresh parsley before serving.

Notes

  • Use pre-cooked lobster meat for faster preparation.
  • If you do not have white wine, substitute with an equal amount of broth.
