Description

A simple recipe for creamy garlic pasta cooked entirely in one pot.


Ingredients

  • 1 pound pasta (fettuccine or linguine recommended)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Place the pasta, broth, minced garlic, salt, and pepper into a large pot or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to medium-low and cook, stirring frequently to prevent sticking, until the pasta is nearly tender and most of the liquid has been absorbed, about 10-12 minutes.
  4. Stir in the heavy cream, butter, and Parmesan cheese.
  5. Continue to cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the pasta.
  6. Remove from heat. Garnish with fresh parsley before serving.

Notes

  • If the sauce is too thick, add a splash more broth or cream to reach your desired consistency.
  • You can add cooked chicken or mushrooms during the last five minutes of cooking for added substance.
